HERB CRUSTED SPANISH COD AND CHORIZO TRAYBAKE

Enjoy the combination of tender cod (or chicken), crunchy breadcrumbs alongside chorizo and roasted vegetables. A convenient one-pan Mediterranean meal.

Ingredients-

  • 1 tin butter beans

  • 1 punnet cherry tomatoes

  • 1 green pepper, roughly chopped

  • 1 red onion, roughly chopped

  • Small handful of black olives

  • 1/2 ring of chorizo, diced

  • 1 tbsp olive oil

  • 1 tbsp red or green pesto

  • 1 tbsp tomato purée

  • 1 garlic clove, finely grated

  • 1 tbsp water

  • 2 cod fillets (or chicken thighs)

  • 1 tbsp olive oil

  • 1 tbsp chopped fresh parsley

  • 1/2 tsp garlic salt or 1/4 tsp salt and 1/2 garlic clove, grated

  • Breadcrumbs

  • 10g finely grated Parmesan


Instructions-

  1. Preheat your oven to 180°C (350°F).

  2. In a baking tray, combine the butter beans, cherry tomatoes, red onion, green pepper, black olives, and 1/2 of the diced chorizo.

  3. In a separate bowl, prepare the dressing by mixing together the tomato purée, 1 tablespoon of olive oil, pesto, grated garlic, and 1 tablespoon of water. Once well combined, pour the dressing over the ingredients in the baking tray.

  4. Place the cod fillets (or chicken thighs) on top of the vegetable mixture in the tray.

  5. In a separate bowl, make the breadcrumb mixture by combining breadcrumbs, finely grated Parmesan, 1 tablespoon of olive oil, chopped fresh parsley, and garlic salt (or 1/4 teaspoon of salt and 1/2 grated garlic clove). Mix everything together.

  6. Sprinkle the breadcrumb mixture over the cod fillets, ensuring they are well covered.

  7. Roast the entire tray in the preheated oven for 20-25 minutes, or until the cod (or chicken) is cooked through and the breadcrumbs are golden and crispy.

  8. Once the cod (or chicken) is cooked, remove it from the tray and set it aside to rest.

  9. If needed, return the vegetable mixture to the oven for additional cooking after giving it a good mix.

  10. Serve the roasted cod (or chicken) alongside the roasted vegetable and chorizo mixture.
