Ingredients-
1 onion, finely diced
2 chicken breasts, diced
1 tablespoon wholegrain mustard
2 tablespoons honey
1 tablespoon light soy sauce
1 garlic clove, grated
1 teaspoon cornflour
1 teaspoon cold water
Instructions-
In your slow cooker, combine the finely diced onion, diced chicken breasts, wholegrain mustard, honey, light soy sauce, and grated garlic clove.
Set the slow cooker to high for 4 hours or low for 8 hours. The low setting will result in more shredded chicken.
Towards the end of the cooking time, prepare a thickening agent by mixing 1 teaspoon of cornflour with 1 teaspoon of cold water. Add this mixture to the stew and mix well.
Leave the stew on low heat while you prepare the rest of the meal.
A perfect pairing for this dish is serving it with creamy mashed white or sweet potatoes and your choice of green vegetables.
Serve and enjoy!
