HOT HONEY PORK BELLY BITES

Ingredients & Method

Hot Honey:
- 454g honey (cheapest jar from Tesco)
- 1 tbsp chilli flakes
- 2 tbsp cider vinegar
- 1 tbsp cayenne pepper (optional for a hotter honey)

Add the above to a pan and simmer for 5 minutes mixing well, add back into the honey jar to cool.


Hot Honey Pork:
- 550g Pork Belly
- 1/2 tsp oregano
- 1/2 tsp sweet smoked paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp olive oil

Add everything above to a bowl along with the pork belly sliced into 2cm cubes. Mix well to fully coat in the spices and seasonings and add to a baking tray and roast in the oven at 220°c for 20-25 minutes until golden.
Brush over 6 tbsp hot honey along with 1 tbsp dark soy sauce and roast for an additional 3/5 minutes.


Coconut Rice:
As per usual, choose a cup or use half a mug for your measurement. Measure out 1 cup or 1/2 mug of rice and add to a pan with oil and fry for 3/5 minutes until it starts turning golden.
Turn the heat down to medium and add 1 cup or 1/2 cup of both water and coconut milk.
This makes the rice=liquid a 1:2 ratio.
Add the lid and simmer for exactly 10 minutes then remove from the heat and leave aside for an additional 5 minutes to finish cooking.

Serve all together with additional hot honey if you fancy!
