INDIAN INSPIRED BAKEAWAY

A flavourful and hearty Indian-inspired bake featuring spiced potatoes and pork koftas baked in a rich tomato and cauliflower sauce.

Ingredients & Method-

For the Potato Mix:

  • 5/6 potatoes, peeled and chopped

  • 1 onion, finely diced

  • 1 tbsp olive oil

  • 1 tbsp cumin powder

  • 1 tbsp coriander powder

  • 1 tsp cumin seeds

  • 1 tbsp ginger, grated

  • 1 tbsp garlic, grated

  • 1/2 tsp turmeric

  • 1 tsp chilli flakes

  • 1 tsp garam masala

Instructions-

  1. Combine all the ingredients in an oven tray.

  2. Bake at 180°C for 30 minutes.

For the Kofte-

  • 500g Pork Mince (or Lamb, Beef, or Chicken mince)

  • 1 tsp Ginger

  • 1 tsp Garlic

  • 1/2 tbsp cumin powder

  • 1/2 tbsp coriander powder

  • 1/2 red onion, grated

  • 1/2 tsp salt

Instructions-

  1. Mix all the Kofte ingredients in a bowl and set aside.

  2. Remove the tray from the oven and add:

    • 400ml stock

    • 1 tin of chopped tomatoes

    • 1/2 cauliflower in florets

    • Handful of peas.

  3. Divide the mince mixture into 6-8 Kofta’s and place in the tray, half submerged.

  4. Bake for an additional 1 hour at 150°C, covered. Then, remove foil and bake for 10 more minutes to brown.

  5. Add fresh lemon and coriander.

  6. Serve and enjoy your Indian-inspired bake-away!
