INDIAN INSPIRED BAKEAWAY
A flavourful and hearty Indian-inspired bake featuring spiced potatoes and pork koftas baked in a rich tomato and cauliflower sauce.

Ingredients & Method-
For the Potato Mix:
5/6 potatoes, peeled and chopped
1 onion, finely diced
1 tbsp olive oil
1 tbsp cumin powder
1 tbsp coriander powder
1 tsp cumin seeds
1 tbsp ginger, grated
1 tbsp garlic, grated
1/2 tsp turmeric
1 tsp chilli flakes
1 tsp garam masala
Instructions-
Combine all the ingredients in an oven tray.
Bake at 180°C for 30 minutes.
For the Kofte-
500g Pork Mince (or Lamb, Beef, or Chicken mince)
1 tsp Ginger
1 tsp Garlic
1/2 tbsp cumin powder
1/2 tbsp coriander powder
1/2 red onion, grated
1/2 tsp salt
Instructions-
Mix all the Kofte ingredients in a bowl and set aside.
Remove the tray from the oven and add:
400ml stock
1 tin of chopped tomatoes
1/2 cauliflower in florets
Handful of peas.
Divide the mince mixture into 6-8 Kofta’s and place in the tray, half submerged.
Bake for an additional 1 hour at 150°C, covered. Then, remove foil and bake for 10 more minutes to brown.
Add fresh lemon and coriander.
