JADE’S BITES SPAGHETTI CARBONARA

Ingredients-
150g Pancetta, diced
80g Parmesan, finely grated
3 egg yolks
1 tsp Black pepper
250g Spaghetti (1/2 pack)
Instructions-
Start by boiling a large pan of water for the pasta and generously salt it.
Dice the pancetta, finely grate the Parmesan, and freshly crush the black pepper.
In a large pan, fry the pancetta while adding the pasta to the salted, boiling water.
In a separate bowl, mix together the Parmesan, egg yolks, and black pepper. This mixture will need to be thinned with pasta water once the pasta is almost cooked. Take off about half a mug of pasta water and set it aside to cool slightly before adding it to the egg mixture to prevent scrambling.
Once the pasta is cooked, and the pancetta is golden, add the drained pasta to the pan with the pancetta, along with a small amount of pasta water.
Reduce the heat on the pasta pan and add in your egg mixture. Immediately mix well to combine.
Keep in mind that the pasta will continue to absorb, so if the consistency is slightly wet, mix it well and allow it to stand off the heat until it reaches the desired texture. Mix again.
