KING PRAWN & CHORIZO ORZO

King Prawn & Chorizo Orzo is a delicious and quick-to-make dish that combines the rich flavours of chorizo and king prawns with orzo pasta. It's a savoury and smoky seafood dish that's ready in just 30 minutes.

Ingredients-

  • 1 small onion, finely diced

  • 3 garlic cloves, finely diced

  • 1/2 chorizo ring (about 100g)

  • 250g orzo

  • 1/2 tsp oregano

  • 600ml chicken stock

  • 250g king prawns

  • 100g peas

  • 100g Parmesan, grated


Instructions-

  1. Gently fry the diced onion and garlic until softened.

  2. Add the diced chorizo to the pan and fry for a minute.

  3. Stir in the orzo, chicken stock, and oregano. Simmer gently for about 10 minutes or until the orzo is almost cooked and has a slight bite in the middle.

  4. Add the king prawns and simmer for an additional 5 minutes or until the prawns are fully cooked.

  5. Finish by adding the peas and the grated Parmesan. Mix well to ensure everything is piping hot.
