Ingredients-
For the Ragu:
500g Lean Beef Mince
500g Lean Pork Mince
2 carrots, finely diced
1/2 celery, 5-6 sticks, finely diced
1 leek, finely diced
1 onion, finely diced
4 garlic cloves, grated
2 tbsp tomato purée
2 beef stock cubes
200ml Red wine
1 bay leaf
1/2 Tsp oregano
1/2 Tsp parsley
3 tins plum tomatoes, blended
1/2 Tsp salt
1/2 Tsp pepper
For the White Sauce:
100g Butter
5 tbsp plain flour
400ml milk
200g cheddar cheese
Instructions-
Begin by browning the lean beef and pork mince separately in a large pan. Use a spatula or potato masher to break up the meat, ensuring a perfect texture. Brown the meat in batches to avoid overcrowding the pan. Set aside the browned meat along with any cooking liquids.
In the same pan, add a touch of oil, and then introduce the finely diced carrots, celery, leek, and onion. Once softened, reincorporate the browned mince into the pan. Stir in the tomato purée, dried herbs (oregano and parsley), red wine, blended plum tomatoes, salt and pepper. Let it simmer for approximately 30 minutes, allowing the sauce to thicken.
While the ragu is on the stove, prepare the white sauce in a separate saucepan. Melt the butter, add the flour and mix in until it turns a golden colour. Gradually whisk in the milk, adding the grated cheddar cheese. Continue whisking until the cheese melts into the blend. Set the white sauce aside.
Now, it's time to assemble the layers of your lasagne. In a baking dish layer - Ragu, Pasta, White Sauce, and repeat. Finish with a layer of grated cheese.
Preheat your oven to 180°C (356°F). Let the assembled lasagne bake in the oven for 35-45 minutes until it reaches a beautiful golden colour and starts bubbling.
