Ingredients-
2 tbsp olive oil
4 garlic cloves, sliced
6 smoked bacon slices, diced
2 tbsp tomato purée
1 tsp oregano
300g cherry tomatoes, halved
1 tsp red wine vinegar
1 tbsp brown sugar
2 mugs pasta
50g grated Parmesan

How to-
Heat olive oil in a large pan and sauté sliced garlic until softened.
Add diced smoked bacon and cook until it starts to turn golden.
Incorporate tomato purée, cooking for a couple of minutes.
Boil pasta separately in hot salted water.
Add oregano and halved cherry tomatoes to the pan, allowing them to soften and create a jammy sauce.
Balance flavours with red wine vinegar and brown sugar, adjusting to taste.
Once the pasta is cooked, add it to the sauce, mixing well.
Turn off the heat, let the pasta absorb the sauce for a minute, then mix again.
Adjust consistency with extra pasta water if needed.
Finish with grated Parmesan and fresh basil.
