MEXICAN CHICKEN LASAGNE
Mexican Chicken Lasagne is a budget-friendly fusion of Italian and Mexican flavours, creating a delightful and wallet-friendly dish. Combining chicken mince, taco beans, and a blend of spices, it's a tasty twist on traditional lasagne. Layered with lasagne sheets and cheddar cheese, this meal costs less than £5 for the entire recipe.

Ingredients-
1 tbsp oil
500g chicken mince
1/2 box (12) lasagne sheets
1 tin chopped tomatoes
1 tin taco mixed beans
100g cheddar cheese
2 peppers
350ml stock
2 tbsp tomato purée
1 tbsp paprika
2 tsp cumin
2 tsp coriander
1 tsp oregano
1 tsp garlic powder
1/2 tsp salt & pepper (Taste for seasoning and adjust)
Instructions-
Heat the oil in a pan over medium heat. Add the chicken mince and fry for a minute.
Add the diced peppers, spices, tomato purée, and chopped tomatoes. Simmer and use a potato masher to create a finer consistency.
After 5 minutes, add the stock and taco beans. Simmer while you finely dice your peppers.
Taste the Ragu for seasoning, and add salt if needed.
Grate the cheese and prepare a large tray (approximately 30x20cm).
Layer the lasagne with Ragu, pasta sheets, and grated cheese. Repeat this process two more times.
Bake at 180°C for 40 minutes. Allow it to rest for at least 15 minutes before slicing.
You can add extra cheese, make a white sauce, or add a pinch of chili flakes for some heat.
Serve as is or with a salad and sour cream.
