Ingredients-

  • 360g butter, softened

  • 360g caster sugar

  • 6 eggs

  • 360g self-raising flour

  • 2 tsp vanilla essence

  • 80ml milk

  • 450g icing sugar

  • 60ml milk

  • Sprinkles


Instructions-

Preparation:

  • Preheat the oven to 180°C.

  • Butter a tray.

  1. In a large bowl, cream together softened butter and caster sugar until light and smooth.

  2. Add eggs one by one, whisking continuously. Don't worry if it splits; it will smooth out with the addition of flour.

  3. Mix in self-raising flour, vanilla essence, and 80ml milk until the batter reaches a pouring consistency.

  4. Pour the batter into the prepared tray.

  5. Bake for 30-35 minutes, or until a wooden skewer comes out clean.

  6. Allow the cake to cool. Optionally, tip it upside down onto a cooling rack for a flatter top.

  7. Mix icing sugar with 60ml milk until smooth, Do not add more milk; it will come together with mixing.

  8. Spread the icing over the cooled cake.

  9. Top with sprinkles for a colourful finish.
