OVEN BAKED PUTTANESCA

In this unique recipe, the rich pasta sauce is roasted alongside a mix of diced onion, garlic, chili, anchovy, capers, chopped tomatoes, and tomato purée.

Ingredients-

  • 1 onion, finely diced

  • 4 large garlic cloves, finely diced

  • 3 tbsp olive oil

  • 1/2 tsp chilli flakes

  • 4 anchovy fillets

  • 1 tbsp capers

  • 1 tin chopped tomatoes

  • 1 tbsp tomato puree

  • 1/2 pack spaghetti


Instructions-

  1. Start by preheating your oven to 175°C.

  2. In an ovenproof tray, add the finely diced onion, garlic, olive oil, chilli flakes, anchovy fillets, capers, chopped tomatoes, and tomato puree.

  3. Roast this flavorful mix in the oven for 20 minutes.

  4. After the initial 20 minutes, remove the tray from the oven, add 100ml of water, mix well, and then return it to the oven for another 15 minutes. Meanwhile, boil the spaghetti in salted water.

  5. Once the tray comes out of the oven, add the cooked and drained spaghetti to the mixture in the tray. Don't forget to save some pasta water. Mix everything together until well combined.
