PORK & LIME CHILLI NOODLES
Such a wonderful quick and easy weekday dish. It’s essential that you use a peppery Pork or Cumberland sausage and finish with the fresh lime juice in this recipe for maximum flavour.

Ingredients-
4 Pork/Cumberland sausages
1 onion, finely sliced
1 green pepper, finely sliced
1 yellow pepper, finely sliced
2 portions of ramen noodles or egg noodles
1 lime
White sesame seeds
Chilli flakes (optional)
Sauce:
2 tbsp soy sauce
1/2 tsp dark soy sauce (optional)
2 tbsp sweet chilli sauce
Instructions-
Begin by finely slicing the onion, green pepper, and yellow pepper.
Sauté the sliced vegetables in a little oil until softened.
In a separate pot, boil the ramen noodles or egg noodles until cooked.
Remove the sausage skins and break up the sausages with a masher, whisk, or spoon.
Add the broken-up sausages to the sautéed vegetables and cook until browned.
Prepare the sauce by combining soy sauce, dark soy sauce (if using), and sweet chilli sauce. Add the sauce to the pan.
Incorporate the cooked noodles into the pan, ensuring they absorb the sauce.
Finish the dish by sprinkling white sesame seeds and optional chilli flakes for an extra kick.
Serve each portion with a generous squeeze of lime for a burst of citrus.
