PORK SOUVLAKI

Ingredients-
For Flatbread Dough (Makes 8):
175g natural yogurt
175g self-raising flour
For Skewer Marinade (Serves 2, 4 skewers):
1 tsp thyme
2 tsp oregano
Juice of 1/2 lemon
3 tbsp olive oil
1 tsp paprika
1/2 tsp salt
1/2 tsp pepper
1/4 tsp chili flakes
For Tzatziki (Serves 4):
250ml natural yogurt
1/4 cucumber, cubed
10 mint leaves, finely diced
Juice of 1/2 lemon
1/2 tsp sugar
1/4 tsp salt
1/2 garlic clove
Instructions-
Make the Skewers:
For 2 servings, use 2 chicken breasts or 3-4 pork shoulder steaks.
Optional: Add mixed peppers and red onion to your skewers.
Marinate the pork or chicken with the skewer marinade ingredients, ensuring it's well-coated.
Prepare the Flatbreads:
Divide the flatbread dough into 8 equal parts.
Roll each part into a 10-15cm circle.
Cook the flatbreads directly on the BBQ or in a dry pan.
They will puff up into balls when the heat is right—flip when slightly browned.
Cook the Skewers:
Grill the skewers on the BBQ or under the grill for about 15-20 minutes, depending on the heat.
Ensure they remain juicy and tender, avoiding overcooking.
Prepare the Tzatziki:
Combine all the tzatziki ingredients and mix well.
Refrigerate until ready to serve.
Serve:
Assemble your pork souvlaki by placing the skewers on the flatbreads.
Serve with a generous dollop of homemade tzatziki.
