ROASTED BACON, PEA & POTATO HASH
This budget friendly Roasted Bacon, Pea & Potato Hash is delightful and comforting which brings together the rich flavours of crispy bacon, roasted potatoes, and the sweetness of peas. Ingredients-
250g Bacon
1kg new potatoes
2 sprigs rosemary
2 tbsp olive oil
1 tsp black pepper
100g frozen peas
40g Parmesan
Instructions-
Prepare the Potatoes:
Parboil the new potatoes until they are fork-tender.
Drain the potatoes and add them to an oven tray.
Create the Hash:
Crush the potatoes in the tray, breaking them up.
Finely chop the bacon and nestle it among the crushed potatoes.
Cut the rosemary sprigs into 3 pieces each and distribute them evenly across the tray.
Sprinkle the black pepper and drizzle the olive oil over the potatoes, bacon, and rosemary.
Roast the Hash:
Place the tray in the oven.
Roast at 175°C for 45 minutes, mixing thoroughly at the 30-minute mark.
Add the Peas and Parmesan:
After 40 minutes of roasting, sprinkle the frozen peas and Parmesan cheese over the hash.
Roast for an additional 5 minutes to warm the peas and melt the Parmesan.
Plate up your roasted bacon, pea, and potato hash and enjoy!
