ROSEMARY & BALSAMIC PORK LOIN

Ingredients-

  • 480g Pork Loin Steaks

  • 10 medium potatoes, cut into potato wedges

  • 1 red onion, cut into 1cm chunks

  • 330g punnet cherry tomatoes

Sauce:

  • 1 tbsp brown sugar

  • 1 tbsp chopped rosemary

  • 2 garlic cloves, grated

  • 1 tbsp balsamic vinegar

  • 1/2 tsp salt

  • 1 tbsp olive oil


Instructions-

  1. Prepare the Sauce:

    • In a bowl, mix together brown sugar, chopped rosemary, grated garlic, balsamic vinegar, salt, and olive oil. Set aside.

  2. Marinate the Pork:

    • Take half of the prepared sauce and spread it evenly over the pork loin steaks. Allow them to marinate while you continue with the recipe.

  3. Prepare Potatoes:

    • Cut the medium-sized potatoes into potato wedges.

    • Boil the potato wedges in salted water until they are fork-tender.

    • Drain the potatoes and allow them to steam dry.

  4. Roast the Potatoes:

    • Place the steamed dry potato wedges, cherry tomatoes, and chunks of red onion on a baking tray.

    • Drizzle the remaining sauce over the vegetables.

    • Roast the potatoes and vegetables in the oven at 180°C for 30 minutes.

  5. Cook the Pork:

    • In a pan, cook the marinated pork loin steaks for 5-7 minutes on each side. The cooking time depends on the thickness of the steaks.

  6. Serve:

    • Serve the rosemary and balsamic-marinated pork loin steaks with the roasted potatoes, cherry tomatoes, and red onion.
