ROSEMARY & BALSAMIC PORK LOIN
Perfectly cooked marinated pork loin steaks, served with roasted potato wedges, cherry tomatoes, and chunks of red onion.

Ingredients-
480g Pork Loin Steaks
10 medium potatoes, cut into potato wedges
1 red onion, cut into 1cm chunks
330g punnet cherry tomatoes
Sauce:
1 tbsp brown sugar
1 tbsp chopped rosemary
2 garlic cloves, grated
1 tbsp balsamic vinegar
1/2 tsp salt
1 tbsp olive oil
Instructions-
Prepare the Sauce:
In a bowl, mix together brown sugar, chopped rosemary, grated garlic, balsamic vinegar, salt, and olive oil. Set aside.
Marinate the Pork:
Take half of the prepared sauce and spread it evenly over the pork loin steaks. Allow them to marinate while you continue with the recipe.
Prepare Potatoes:
Cut the medium-sized potatoes into potato wedges.
Boil the potato wedges in salted water until they are fork-tender.
Drain the potatoes and allow them to steam dry.
Roast the Potatoes:
Place the steamed dry potato wedges, cherry tomatoes, and chunks of red onion on a baking tray.
Drizzle the remaining sauce over the vegetables.
Roast the potatoes and vegetables in the oven at 180°C for 30 minutes.
Cook the Pork:
In a pan, cook the marinated pork loin steaks for 5-7 minutes on each side. The cooking time depends on the thickness of the steaks.
Serve:
Serve the rosemary and balsamic-marinated pork loin steaks with the roasted potatoes, cherry tomatoes, and red onion.
