SALT ‘N PEPPER CHICKEN

Ingredients-

  • 4 chicken breasts, cut into chunks

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 garlic clove, grated

  • Sesame oil

  • 2 tablespoons cornflour

  • 1 teaspoon cider vinegar

For the seasoning:

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 teaspoon five spice

  • 1 large onion, roughly chopped

  • 1/2 yellow pepper, roughly chopped

  • 1/2 green pepper, roughly chopped

  • 1 large red chili, sliced


Instructions-

  1. Cut the chicken breasts into bite-sized chunks and place them in a bowl. Add the cider vinegar and mix well.

  2. Season the chicken with 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, and the grated garlic. Sprinkle the cornflour over the chicken and toss until the chicken is coated evenly.

  3. Heat some sesame oil in a pan and shallow-fry the chicken chunks in two batches until they start to brown on the outside. Drain the fried chicken on kitchen paper and set aside.

  4. In the same pan, add a bit more sesame oil and add the roughly chopped onion and peppers. Sauté for about 5 minutes or until they become soft.

  5. Add the seasoning mix, which includes 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of five spice, and the sliced red chili. Stir well to combine.

  6. Return the cooked chicken to the pan and stir-fry for an additional 2 minutes, ensuring the chicken and vegetables are well coated with the seasoning.

  7. Serve the Salt 'n Pepper Chicken with your choice of side dish, such as chips, fried rice, or wraps.
