SALT ‘N PEPPER CHICKEN

Ingredients-
4 chicken breasts, cut into chunks
1/2 teaspoon salt
1/2 teaspoon black pepper
1 garlic clove, grated
Sesame oil
2 tablespoons cornflour
1 teaspoon cider vinegar
For the seasoning:
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon five spice
1 large onion, roughly chopped
1/2 yellow pepper, roughly chopped
1/2 green pepper, roughly chopped
1 large red chili, sliced
Instructions-
Cut the chicken breasts into bite-sized chunks and place them in a bowl. Add the cider vinegar and mix well.
Season the chicken with 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, and the grated garlic. Sprinkle the cornflour over the chicken and toss until the chicken is coated evenly.
Heat some sesame oil in a pan and shallow-fry the chicken chunks in two batches until they start to brown on the outside. Drain the fried chicken on kitchen paper and set aside.
In the same pan, add a bit more sesame oil and add the roughly chopped onion and peppers. Sauté for about 5 minutes or until they become soft.
Add the seasoning mix, which includes 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of five spice, and the sliced red chili. Stir well to combine.
Return the cooked chicken to the pan and stir-fry for an additional 2 minutes, ensuring the chicken and vegetables are well coated with the seasoning.
Serve the Salt 'n Pepper Chicken with your choice of side dish, such as chips, fried rice, or wraps.
