SALTED CARAMEL BANANA UPSIDE DOWN CAKE
An irresistible blend of caramel and ripe bananas in our Salted Caramel Upside Down Banana Cake. This easy-to-make and budget-friendly. Enjoyed warm or chilled, it's a delightful home-cooked treat. Please note, you can also exchange the banana for slices of cooking apple, 1cm thick slices layered (raw) as per the recipe below.

Ingredients-
Cake:
227g softened unsalted butter
115g caster sugar
227g self-raising flour
1 egg
1/2 tsp vanilla essence
4-5 soft leftover bananas
Caramel Sauce:
100g brown sugar
Large pinch of salt
2 tbsp unsalted butter
60ml double cream
Instructions-
Prepare Caramel Sauce:
Melt the sugar in a saucepan.
Add a pinch of salt and then the butter once the sugar is melted.
Keep on medium heat, finish with the cream, turn to low, and whisk. Set aside.
Make the Cake Batter:
Cream together softened butter and sugar until light and smooth.
Add the egg and vanilla, mix until incorporated.
Fold in the self-raising flour and set aside.
Prepare the Fruit:
Slice 4-5 soft bananas and arrange them at the base of the cake tin on baking paper.
Pour the prepared caramel sauce over the bananas, spreading it evenly.
Baking:
Top with the cake mixture and bake at 160°C for 35-40 minutes.
Flip and Serve:
Take out of the oven and carefully flip the cake, peeling off the baking parchment.
Serve warm or cold, ideally with custard or ice cream.
