SAUSAGE & HALLOUMI OMLETTE
The perfect lazy Saturday morning family brunch

Ingredients
- 4 Cumberland sausages
- 1/4 block halloumi
- 4 eggs
- Beef Tomatoes (the sweetest when fried)
Serve with toast, avocado, salad, beans, mushrooms, make it your own but the sausage and halloumi omelette is totally essential!
Method
De skin 4 sausages (I love Cumberland for this) and break up in the pan frying for 2-3 minutes.
Next cube your halloumi and add to the cooked sausage continuing to cook!
At this point you want the sausage to start caramelising and the halloumi to start browning.
Next whisk your eggs and add to the pan turning to low.
Cook for around 2-3 minutes until you can release from the bottom.
Finish cooking under the grill for 30 seconds to a minute and serve immediately!
