This hearty beef or lamb stew is a comforting classic done our way. With its simple ingredients and easy preparation, you can create a delicious meal that's perfect for warming up on a cold day.

SERVES 4-6
Ingredients-
400g-700g Beef or Lamb Stewing Chunks (adjust to your preference)
1 Onion, chopped
5-6 Medium Carrots, roughly chopped
5 Beef stock cubes
900g Potatoes, peeled and large-cubed (around 8 medium potatoes)
2 tbsp Cornflour mixed with 2 tbsp cold water (for thickening)
1/2 tsp Black Pepper (optional)
2 Sprigs of Thyme (optional)
Instructions-
Preparation:
In a large pot, brown the beef or lamb with the chopped onion in a little oil.
Add the roughly chopped carrots and 900ml of water, along with 3 beef stock cubes.
Bring the mixture to a boil, then reduce the heat to medium.
Cover the pot with a lid and let it simmer for 2 hours.
Continued Cooking:
After 2 hours, add the peeled and large-cubed potatoes to the pot, along with another 800ml of hot water and 2 beef stock cubes.
If you desire, you can add two sprigs of thyme at this point.
Keep the potato pieces large.
Boil the stew for another 2 hours on low to medium heat with the lid on.
Finishing Touch:
Once the stew is cooked and all the ingredients are tender, thicken it with the cornflour/water slurry. Mix it in well to achieve your desired consistency.
If you like, finish the stew with a sprinkle of black pepper. Freshly ground black pepper is a great choice for this dish.
Serving:
Serve your Beef or Lamb Stew hot, ideally with some crusty buttered bread, and consider pairing it with beetroot and pickled cabbage for added flavour and contrast.
