SERVES 4-6

Ingredients-

  1. 400g-700g Beef or Lamb Stewing Chunks (adjust to your preference)

  2. 1 Onion, chopped

  3. 5-6 Medium Carrots, roughly chopped

  4. 5 Beef stock cubes

  5. 900g Potatoes, peeled and large-cubed (around 8 medium potatoes)

  6. 2 tbsp Cornflour mixed with 2 tbsp cold water (for thickening)

  7. 1/2 tsp Black Pepper (optional)

  8. 2 Sprigs of Thyme (optional)

Instructions-

Preparation:

  1. In a large pot, brown the beef or lamb with the chopped onion in a little oil.

  2. Add the roughly chopped carrots and 900ml of water, along with 3 beef stock cubes.

  3. Bring the mixture to a boil, then reduce the heat to medium.

  4. Cover the pot with a lid and let it simmer for 2 hours.

Continued Cooking:

  1. After 2 hours, add the peeled and large-cubed potatoes to the pot, along with another 800ml of hot water and 2 beef stock cubes.

  2. If you desire, you can add two sprigs of thyme at this point.

  3. Keep the potato pieces large.

  4. Boil the stew for another 2 hours on low to medium heat with the lid on.

Finishing Touch:

  1. Once the stew is cooked and all the ingredients are tender, thicken it with the cornflour/water slurry. Mix it in well to achieve your desired consistency.

  2. If you like, finish the stew with a sprinkle of black pepper. Freshly ground black pepper is a great choice for this dish.

Serving:

  1. Serve your Beef or Lamb Stew hot, ideally with some crusty buttered bread, and consider pairing it with beetroot and pickled cabbage for added flavour and contrast.
