SLOW COOKED RAGU
A rich meat sauce that is both versatile and easy to prepare. This recipe combines lean beef mince with a range of vegetables, herbs, and spices to create a tender and hearty Ragu. The dish is perfect for pasta, such as spaghetti, or as a filling for lasagne, and it can be frozen into portions for quick and convenient future meals. For an added treat, enjoy your Ragu with homemade garlic bread.

Ingredients-
1 onion, finely diced
2 grated carrots, finely diced
3 celery stalks, finely diced
2 garlic cloves, finely diced
500g lean beef mince
3 tbsp tomato purée
2 beef stock cubes
2 tsp Worcestershire sauce
5 small sprigs of thyme
1 tbsp oregano
500ml water
1 tsp salt
1 tsp black pepper
1 tin of tomatoes
Instructions-
In a large pot or slow cooker, heat a small amount of oil over medium heat. Add the finely diced onion, carrots, and celery, and cook for 5-10 minutes to soften.
Add the finely diced garlic and lean beef mince. Fry until the beef is browned.
Next, add the tomato purée, herbs (thyme and oregano), beef stock cubes, Worcestershire sauce, and cook for an additional 5 minutes to cook out the purée.
Finish by adding the water and tinned tomatoes. Cook for 1.5-2 hours on medium heat if using the stovetop, or transfer to a slow cooker and cook for 4-5 hours on high.
Once the cooking time is completed, season with salt and pepper to taste. It's recommended to taste before adding salt.
Take a potato masher and mash the sauce until you get a smoother meat sauce.
The Ragu is tender and rich, and it can be frozen into portions for future use.
Homemade Garlic Bread:
1 part-baked ciabatta
1 garlic clove
2 tbsp chopped parsley
2 tbsp salted butter
1 tbsp olive oil
Mix the above ingredients for the garlic bread and spread the mixture on the ciabatta.
Bake for 8-10 minutes at 175°C (347°F).
