SERVES various
Ingredients
750g unsmoked gammon
200ml weak stock/water
1 tsp thyme
1 tsp garlic granules
1 tsp paprika
Add the above to a slow cooker and leave on high for 3 - 3.5hours.
Once ready, remove the now ham from the slow cooker and cut in half, leave half to cool then wrap that half in clingfilm and then foil and leave in the fridge until the next day where it will be tender but sliceable.
Diced up the remaining ham at this point and return to the slow cooker with-
- 800g peeled and diced potatoes
- 2 diced leeks (500g)
- 1.5ltr water
- 1 chicken stock cube
- 1/4 tsp thyme
- 1/4 tsp oregano
Leave this on high for 3.5 hours until the potatoes are fork tender, leave either chunky or blend into a smooth soup. I highly suggest if blending adding cream cheese or double cream to create a creamier soup!
