SLOW COOKER MONGOLIAN BEEF
Full of flavour and a really convenient dish that combines tender diced beef steak with a mix of vegetables and a rich, savoury sauce. This dish is perfect for those busy days when you want a delicious meal with minimal effort. Simply add all the ingredients to your slow cooker, and let it work its magic. The beef can be browned beforehand or not.

Ingredients-
1 onion, finely sliced
2 peppers, finely sliced
800g diced beef steak
1 carrot, cut into batons
4 garlic cloves, grated
2 tbsp fresh grated ginger
1 tbsp tomato purée
125ml light soy sauce
250ml beef stock
50g brown sugar
2 tbsp cornflour
Instructions-
Add all the ingredients to the slow cooker and mix well. You can choose to brown the beef before adding it, but it's not necessary, and the dish works well without this step.
Cook on high for 4-5 hours or on low for 6-8 hours. The beef will become tender, and the flavours will combine as it cooks.
