SLOW COOKER SWEET & SOUR PORK
A convenient and budget-friendly dish that requires minimal effort. Using lean pork fillet, peppers, and a savoury-sweet sauce. Let your slow cooker do the work, and in just a couple of hours, you'll have a tender and flavourful dish ready to be served over a bed of perfectly cooked rice.

Ingredients-
1 Lean Pork Fillet (approximately 0.5kg)
2 Red Peppers (smaller in size)
1 Small White Onion
4 tbsp Ketchup
4 tbsp White Sugar
1 tbsp Cider Vinegar
1 Inch Ginger, grated
2 Garlic Cloves, grated
2 tbsp Soy Sauce
2 tbsp Cornflour
3 tbsp Cold Water
Instructions-
Add all ingredients to the slow cooker.
Cook on high for 1 1/2 hours.
Remove the pork fillet and dice it into 1 cm strips.
Add the diced pork back into the slow cooker for the last 1/2 hour.
While the pork is finishing, prepare and cook rice using your preferred method.
Serve the sweet and sour pork over rice and enjoy!
Note: The total cooking time is 2 hours on high in the slow cooker.
