SMOKED BACON & BROCCOLI CARBONARA

Smoked Bacon & Broccoli Carbonara is a twist on the classic Italian pasta dish. It combines smoky bacon, fresh broccoli, and creamy carbonara sauce for a quick and tasty meal.

Ingredients-

  • 200g spaghetti

  • 200g smoked bacon, diced

  • 200g broccoli, cut into small florets

  • 3 large eggs

  • 50g grated Parmesan cheese (leave 1 tbsp for garnish)

  • 1 clove garlic, minced

  • Salt and black pepper to taste

  • Fresh parsley for garnish

  • Extra virgin olive oil


Instructions-

  1. Boil the spaghetti in a large pot of salted water until al dente. Drain and set aside.

  2. In a pan, cook the diced bacon until crispy. Remove it from the pan and drain on paper towels.

  3. In the same pan, add the broccoli and minced garlic. Sauté until the broccoli is tender.

  4. In a bowl, whisk together the eggs, grated Parmesan (reserving 1 tbsp for garnish), and a pinch of black pepper.

  5. Combine the cooked spaghetti, crispy bacon, and sautéed broccoli in the pan.

  6. Pour the egg and cheese mixture over the pasta and quickly toss to combine. The heat of the pasta will cook the eggs and create a creamy sauce.

  7. Season with salt and more black pepper if needed.

  8. Garnish with fresh parsley and the remaining tablespoon of Parmesan cheese.

  9. Drizzle with extra virgin olive oil for a finishing touch.
