SMOKEY BBQ PULLED CHICKEN

This glorious & delicious tender chicken is ideal to top Jacket potatoes, serve with vegetables & noodles, rice, wraps, salad and more.

Ingredients

- 650g diced chicken. For this I used breast but as always, boneless thighs are my preferred choice
- 8 tbsp BBQ Sauce, any cheap BBQ sauce will be fine as we enhance this with spices and extra garlic
- 3 garlic cloves, finely sliced
- 2 red bell pepper, sliced
- 1 tbsp smoked paprika
- 1/2 tbsp oregano
- 1 tsp salt
- 1 tsp black pepper
- pinch cinnamon
- extra BBQ sauce to finish

Method

Add the above to the slow cooker and cook on high for 3 hours or low for 5.
Once cooked, shred the chicken and mix well, add additional BBQ sauce (around 6 tbsp) to finish the chicken.
Serve with your preferred dish- mine being a jacket potato and grated cheese!
