SODA BREAD
This is the easiest bread you can make, don’t be mistaken, you aren’t getting a light, fluffy loaf and this doesn’t take any proving. It has a unique flavour and is beautifully dense and soft with the most crispy crust!

Ingredients-
- 550g plain flour (you can also add half wholemeal)
- 70g rolled oats
- 1 tsp salt
- 1 tsp baking soda
- 2 tbsp cold cubed butter
- 350ml buttermilk (You can get this from the Homemade Butter recipe)
How to-
To a large bowl, sieve in the flour, oats, salt and baking soda. Add the butter to the dry ingredients and rub together into a crumb.
With a spoon mix in the buttermilk to form a dough, this doesn’t need much mixing, just until combined.
Add to a floured work surface and form into a circle/oval and place on a lined baking tray.
Cut in a deep cross and poke a hole in each quarter.
Brush the soda bread with whisked egg and sprinkle with additional oats.
Bake at 215°c for 15mins then at 200°c for an additional 30 minutes.
