SOY & CHILLI PORK
(tenderloin) with toasted garlic rice

This quick and delicious dish is ideal for a weekday tea that packs flavour and satisfaction!
Ingredients
- 1 pork tenderloin
- 1 tbsp garlic oil
- 1 cup basmati rice
- 1/2 broccoli, cut into florets
Sauce:
- 3 tbsp sweet chilli
- 1 tbsp light soy
- 1 tbsp dark soy
- 1 tbsp honey
- 1/2 lime juice
- 1 Tsp garlic granules
- 1 Tsp cornflour
Method
Firstly toast your rice in the garlic oil for 3 minutes until it starts to become golden, keep stirring.
Add 2 cups of cold water to the pan and mix, add a lid and boil on medium heat for exactly ten minutes.
Do not remove the lid at any point, once cooked take off the heat without removing the lid and leave aside for an additional 5 minutes to steam.
You can leave this for up to 30 minutes with the lid on and it will always be perfect.
Dice the pork tenderloin into 1 cm chunks and brown in a pan, then leave aside.
Mix together your sauce and add to a frying pan to simmer slowly until thick and sticky, add the pork back in to cook further and get coated in the gorgeous sticky sauce.
Add the toasted garlic rice and broccoli or any greens.
Sprinkle with sesame seeds to garnish and a wedge of lime.
