SPEEDY CHICKEN & CHORIZO PASTA BAKE
Loaded with diced chicken, peppers, fine-diced chorizo, and perfectly cooked penne pasta. The sauce is made from blended plum tomatoes and chicken stock, with a touch of oregano. Topped with a generous layer of gooey mozzarella, it's an effortless and tasty meal.

Ingredients-
2 chicken breasts, diced
3 peppers, diced
1/2 red onion, finely diced
1/2 chorizo, finely diced
1 garlic clove, grated
160g penne pasta
1 tin plum tomatoes (400g, blended)
150ml chicken stock
1 tsp oregano
1/2 tsp salt & pepper

Instructions-
Preheat your oven to 200°C.
In a large ovenproof dish, combine diced chicken, peppers, red onion, chorizo, and grated garlic.
Add the penne pasta to the dish, ensuring an even distribution.
In a blender, combine plum tomatoes until smooth. Pour the blended tomatoes over the ingredients in the dish.
Pour in the chicken stock, sprinkle oregano, and season with salt and pepper to taste.
Mix all the ingredients thoroughly, ensuring even coating with the tomato sauce.
Cover the dish and bake in the preheated oven for 30 minutes.
Uncover the dish, top with additional Mozzarella, and bake for an extra 10-15 minutes until the cheese is melted and golden.
If you prefer a creamier texture, mix 1 tbsp of cream cheese with the chicken stock before adding it to the dish.
Keep an eye on the consistency, and if there's excess liquid, leave the dish in the oven without a lid for a few additional minutes.
