SPEEDY SAUSAGE CASSEROLE

This Speedy Sausage Casserole is a quick and tasty one-pot dish that's perfect for busy weeknight dinners. It combines juicy sausages with a flavourful sauce made from tomatoes, peppers, cannellini beans, and a blend of seasonings. It can be served with potato wedges, mashed potatoes, or garlic bread. A good choice if you want minimal effort.

Ingredients-

  • 10 sausages

  • 1 tbsp olive oil

  • 1 sliced onion

  • 1 beef stock cube

  • 2 tbsp tomato purée

  • 1 tin of chopped tomatoes

  • 1 orange pepper, roughly chopped

  • 1 tin of water (use the empty tomato tin)

  • 1 tin of cannellini beans (you can add two tins if serving 5-6 people)

  • 2 Parmesan rinds (optional, for added flavour)

  • 1 tsp oregano

  • 3 glugs Worcestershire sauce

  • 1 tsp red wine vinegar

  • 1 tbsp sugar (you can use white sugar or coconut sugar)

  • 1 tsp salt (add to taste)


Instructions-

  • In a large pot, heat 1 tablespoon of olive oil.

  • Brown the sliced onion and sausages in the oil until they have a rich, golden colour.

  • Crumble the beef stock cube into the pot with the sausages.

  • Add the tomato purée, chopped tomatoes, chopped orange pepper, cannellini beans, and the Parmesan rinds (if using).

  • Pour in a tin of water using the empty tomato tin to measure.

  • Season with oregano, Worcestershire sauce, red wine vinegar, sugar, and salt to taste.

  • Simmer the mixture on the stovetop for around 20 minutes, allowing the sauce to thicken.

Serve the Speedy Sausage Casserole with your choice of sides like potato wedges, mashed potatoes, or garlic bread.
