SPICED LAMB BURGER
Containing juicy lamb patties, crispy carrot fries, and a garlic feta yoghurt sauce. The spiced lamb patties are seared, and the carrot fries are seasoned with a blend of spices and roasted until crispy.

Ingredients-
Burger Ingredients:
400g lamb mince
1 tsp cumin
1 tsp coriander
1/4 tsp chilli powder (optional)
1/4 tsp salt
1/2 lemon zest
1 egg yolk
2 tbsp bread crumbs
10 fresh mint leaves, finely chopped
Carrot Fries Ingredients:
500g carrots
2 tbsp cornflour
1/2 tsp black pepper
1/4 tsp cumin
1/4 tsp coriander
Garlic/Feta Yoghurt Ingredients:
1/2 block feta
4 tbsp yoghurt
Squeeze of lemon (1 tsp)
1 tsp sugar
1/2 garlic clove, grated
6-8 mint leaves, finely chopped
Instructions-
Prepare Burger Patties:
In a bowl, combine lamb mince, cumin, coriander, chilli powder (if using), salt, lemon zest, egg yolk, bread crumbs, and finely chopped mint leaves.
Mould the mixture into 2 thick patties or 4 smaller patties.
Set the patties aside while you make the carrot fries.
Cook the Burgers:
In a hot pan, sear the burger patties to create a char on both sides.
As you cook, drain the fat that appears. Lamb mince is typically around 20% fat, and you can remove a substantial amount of fat by draining while cooking.
Prepare Carrot Fries:
Peel and cut the carrots into fry-like shapes.
Toss the carrot fries in cornflour and the mixture of black pepper, cumin, and coriander until they are thoroughly coated.
Place the coated carrot fries on a baking tray and spray them with oil.
Bake at 200°C for 25-30 minutes until they are crispy.
Finish with a sprinkle of salt to season.
Make Garlic/Feta Yoghurt Sauce:
In a blender or food processor, combine feta, yoghurt, lemon juice, sugar, grated garlic, and finely chopped mint leaves.
Blend until smooth and well mixed.
Construct the Burgers:
Assemble the burgers as desired. You can add lettuce, cucumber, tomato, or other favourite toppings.
