SPICY NDUJA BAKED SPAGHETTI

An achievable and delicious dish. This recipe brings a touch of spice to your kitchen with a blend of Nduja, red peppers, onions, and perfectly cooked spaghetti. Baking couldn't be simpler; just mix the ingredients, cover, and bake. In under an hour, you'll have a mouth-watering, hassle-free meal. For those wanting a little extra, it pairs well with Mozzarella or Burrata. Whether you choose Nduja or pesto (non-spice version), this recipe makes dinner time a breeze.

Ingredients-

  • 250g spaghetti (1/2 pack)

  • 1 tbsp olive oil

  • 1 tsp salt

  • 2 heaped tbsp Nduja

  • 2 red peppers, rough diced

  • 1 onion, rough diced

  • 500ml Passata

  • 300ml stock

  • 1/2 tsp oregano


Instructions-

  1. Start by finding an oven tray that is at least 30cm long to accommodate the spaghetti.

  2. Add the spaghetti to the tray, along with salt and olive oil. Mix well to prevent the pasta from sticking together.

  3. Add the Passata, Nduja, stock, and oregano to the tray, along with the diced vegetables. Give it a gentle mix to combine.

  4. Cover the tray tightly with foil and bake at 190°C for 50 minutes, mixing halfway through.

  5. Once the dish is cooked, mix it well and finish with a sprinkle of Parmesan for seasoning.

  6. For an extra touch, serve with Mozzarella or Burrata.

*Note: If you prefer, you can replace the Nduja with half the amount of Pesto, whether Red or Green, if you don't want to use Nduja.
