STEAK & ALE PIE

Comforting and hearty, exactly what a pie should be, combines tender diced beef with the rich flavours of ale, savoury vegetables, and a touch of sweetness. The slow-cooked filling is encased in flaky pastry. It can be made family-sized or as an individual serving. Serve it hot, straight from the oven for maximum taste and satisfaction.

Ingredients-

  • 1.2kg Diced Beef (3x 400g packs)

  • 1 tbsp salt

  • 1 tbsp freshly ground black pepper

  • 500g carrots, peeled & diced

  • 1 onion, diced

  • 1 bottle pale ale (500ml)

  • 2 tbsp tomato purée

  • 2 tbsp plain flour

  • 2 sprigs of rosemary

  • 2 tbsp Worcestershire sauce

  • 500 ml beef stock

  • 4 tbsp sugar

  • ready rolled puff pastry


Instructions-

  1. Season the beef with salt and pepper. Brown the beef in batches in oil. Be careful not to overcrowd the pan as it may not brown properly. Have a baking tray ready to place the browned beef.

  2. While the beef is browning, dice your carrots, onion, and mushrooms. If there is excess moisture in the pan preventing the beef from browning, drain it into a dish.

  3. Add the diced carrots and onions to the same pan and sauté until they soften. Then add the mushrooms.

  4. Deglaze the pan with a splash of pale ale and add the flour, tomato purée, rosemary, sugar, and Worcestershire sauce. Mix well.

  5. Add the beef stock and the rest of the pale ale. You have three options for cooking: Oven, Slow Cooker, or Hob.

    • Oven: Transfer the mixture to an oven tray, cover with foil, and bake at 180°C for 2 hours.

    • Slow Cooker: Transfer directly to the slow cooker and cook on high for 5 hours.

    • Hob: Cook on high heat at a medium simmer for about 1.5 hours, stirring occasionally if you're confident it won't stick. Let the mixture completely cool.

  6. Once the filling has cooled, you can assemble your pies. Add the pastry to the top, crimping the edges with a fork. Cooking times for different pie sizes:

    • Family Pie: 45-55 Minutes at 180°C (Brush with egg before baking)

    • Individual Pie: 30-45 Minutes at 180°C (Brush with egg before baking)
