STEAK, FETA & ORZO TOMATO SALAD

A speedy steak salad with a complimentary mix of bright flavours. Ideal for prepping ahead and eating hot or cold.

Ingredients:

  • 2 quick cook steaks- I used rump

  • 4 tomatoes

  • Fresh basil

  • 140g orzo pasta

  • 1/2 block feta cheese

  • 2 slices bread

  • 1 tbsp olive oil

  • 1/2 tsp garlic powder

  • Salt and pepper

Dressing-

  • 60ml olive oil

  • 20ml balsamic vinegar

  • 1 tbsp honey

  • Pinch salt & pepper


Instructions:

  1. Dice your bread into cubes and add to a bowl along with 1 tbsp olive oil, garlic powder, salt and pepper, add to a hot frying pan and fry for around 4-5 minutes until crispy- then leave aside.

  2. Mix your dressing with all ingredients in the dressing list and whisk until fully emulsified and leave aside.

  3. Cook your seasoned steak in oil until your required doneness then leave aside to rest.

  4. Boil your orzo for 10-12 minutes in salted water until fully cooked, drain and leave aside.

  5. Dice your tomatoes into chunky pieces.

  6. In a large dish add the orzo, chopped tomatoes, crumbled feta, shredded basil and croutons.

  7. Next dice the steak into bite sized pieces.

  8. Add the dressing to the salad and finish with the steak and more basil for garnish and serve.
