STEAK & HALLOUMI SKEWERS

The tenderness of steak and the richness of halloumi with a side of aromatic and spiced Jollof Rice. The result is a delicious and well-rounded meal that's perfect for family dinners or special occasions. Please note this isn't a traditional jollof rice but more so a quicker version using more accessible ingredients.

Rice Ingredients-

  • 1 tbsp olive oil

  • 1 onion, finely diced

  • 3 garlic cloves, finely diced

  • 3 tomatoes, roughly diced

  • 1 tbsp tomato purée

  • 400ml chicken stock

  • 250g basmati rice

Spice Blend-

  • 1 tsp cumin

  • 1 tsp coriander

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/2 tsp black pepper

  • 1/2 tsp cardamom

Skewers Ingredients-

  • 2 steaks (fillet, sirloin, or rump)

  • 1 block halloumi

  • 1 pepper

  • 1 tsp African spice blend

  • 1 tsp olive oil


How to-

Jollof Rice:

  1. Mix the spice blend together, leaving 1 teaspoon aside for the skewers, and add the rest to the rice.

  2. In a large non-stick pan, heat the olive oil and sauté the finely diced onion and garlic until they become soft and translucent.

  3. Add the roughly diced tomatoes and tomato purée to the pan. Mix well.

  4. Add the basmati rice and chicken stock. Cover with a lid and bring to a boil. Cook for exactly ten minutes on medium heat.

  5. After boiling, you can remove the pan from the heat and leave it aside for up to 30 minutes, allowing you time to prepare the skewers before serving.

Skewers:

  1. Dice the steaks, halloumi, and peppers. Thread them onto soaked wooden skewers.

  2. Brush the skewers with olive oil and sprinkle with the reserved 1 teaspoon of the African spice blend.

  3. Grill the skewers for around 3-5 minutes, rotating them several times, until they are cooked to your desired level.
