STEAK PIE STEW

This is an extra beefy stew, serve with mash potatoes and vegetables or your preferred sides

Ingredients

- 1 kg Beef roasting joint (weight closest too) diced
- 1/2 tsp salt, 1/2 tsp pepper, 3 tbsp corn flour
- 1 onion, sliced
- 4 garlic cloves, rough chopped
- 2-3 carrots, diced
- 2 celery stick, diced
- 4 large potatoes, peeled & large diced
- 900ml veg stock, 1 tbsp cornflour, 1 tbsp tomato purée
- 2 tbsp Henderson relish
- 2 bay leaves
- 1/2 tsp thyme
- 1 sprig rosemary
- 200ml red wine- optional

Method

Coat the diced beef in the cornflour, salt & pepper. Fry in oil until you create a brilliant sear and the beef is well browned.
Add everything else into the slow cooker and leave on high for 7 hours- check at 6 hours.
The beef needs a longer cook so if you need to cook on low, it may take around 10 hours so ideal for work shifts too.
