STICKY LEMON CHICKEN TRAYBAKE

A mouth-watering dish that combines succulent chicken, tender asparagus, and roasted potatoes in a sticky lemon and honey sauce. With the zest of lemon and the sweetness of honey, this traybake is a delicious and easy-to-make dinner option.

Ingredients-

  • 6-8 potatoes, peeled and cubed

  • 1 red onion, roughly diced

  • 1/2 teaspoon salt

  • 1 tablespoon olive oil

  • Thyme sprigs (optional)

  • 2 peppers, cubed

  • Asparagus, with ends trimmed

  • 2 chicken breasts or 4-6 chicken thighs

Sauce:

(Make in a measuring jug)

  • Juice of 1 lemon (approximately 50ml)

  • Zest of 1 lemon

  • 100ml honey

  • 1 tablespoon dark soy sauce


Instructions-

Step 1: Preparing the Potatoes and Onions

  1. Peel and cube the potatoes, then add them to a lined baking tray with baking parchment or paper.

  2. Mix in the roughly diced red onion, salt, and olive oil. Optionally, add sprigs of thyme for extra flavour.

  3. Mix well and bake for 30 minutes at 200°C.

Step 2: Making the Lemon Honey Sauce

  1. In a measuring jug, combine the lemon juice (approximately 50ml), lemon zest, honey, and dark soy sauce. Mix thoroughly and set aside.

Step 3: Marinating the Chicken

  1. Marinate the chicken by drizzling it with half of the prepared lemon honey sauce. Ensure the chicken is coated evenly.

Step 4: Adding Peppers and Baking

  1. Dice the peppers into bite-sized chunks and prepare the asparagus by trimming the ends. Soak the asparagus in water if it appears slightly wrinkled.

  2. Take the potatoes out of the oven after the initial 30 minutes and toss them well.

  3. Add the cubed peppers to the tray and mix everything thoroughly.

  4. Add the marinated chicken to the tray and drizzle the remaining lemon honey sauce over it.

  5. Bake for an additional 20 minutes.

Step 5: Adding Asparagus and Final Baking

  1. After the 20 minutes, add the asparagus to the tray and bake for an additional 5 minutes or until the chicken is fully cooked and the vegetables are tender.

Step 6: Serving

  1. Serve the Sticky Lemon Chicken Traybake hot, garnished with fresh lemon wedges.

  2. To serve, take out the chicken and place it on individual plates. Then, give the potatoes and vegetables a good mix to coat them in the incredible sticky, zesty dressing.
