STICKY ONION & SAUSAGE TRAYBAKE

This Sticky Onion and Sausage Traybake is budget-friendly and one of my favourite easy weeknight recipes. With sausages, potatoes, and cabbage roasted in a tasty chutney-infused chicken stock, it's a simple, hearty, comfort food.

Ingredients-

  • 1 Sweetheart cabbage

  • 2.5kg Wonky Potatoes (may not need all)

  • 8 Cumberland/Lincolnshire Sausages

  • 600ml chicken stock

  • 4-6 tbsp chutney (red onion chutney or sweet fruit chutney)


Instructions-

  1. Oil your tray with 1 tsp of oil and brush it all over.

  2. Place the potatoes in the tray. Use about 3 potatoes per person.

  3. Add the chicken stock and roast uncovered in the oven at 180°C for 45 minutes.

  4. Remove from the oven and shake well. Quarter the sweetheart cabbage. You can leave the core in to keep the cabbage together. Rub the cabbage in all the remaining stock to ensure it's well-coated. Season the cabbage with black pepper.

  5. Place the sausages on top (keep them at the top so they brown) and add dollops of chutney.

  6. Roast again for 30 minutes.

  7. The secret in this dish is the flavour in the tray, so when serving, remove the potatoes and sausages first, rub the cabbage in the tray juices, and pour over when serving.

  8. If the tray is dry but not burnt, you can add 1 tbsp of hot water to the tray to mix and release that flavour.
