STICKY SAUSAGE TRAYBAKE

Ingredients-

  • 5 potatoes

  • 2 medium sweet potatoes

  • 1 tbsp olive oil

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1 red onion

  • 3 peppers

  • 2 tomatoes

  • 8 sausages

  • 5 sprigs of thyme or rosemary

  • 3 tbsp onion chutney


Instructions-

  1. Prepare the Potatoes:

    • Cube the potatoes into 2cm pieces.

    • Drizzle with olive oil and sprinkle with salt and pepper.

    • Roast in the oven at 180°C for 40 minutes.

  2. Assemble the Traybake:

    • After the potatoes have roasted for 40 minutes, remove them from the oven.

    • Add the red onion, peppers, tomatoes, and sausages to the tray with the potatoes.

    • Toss everything together to combine.

  3. Bake Again:

    • Return the tray to the oven.

    • Bake at 180°C for an additional 20 minutes.

  4. Add the Chutney:

    • Remove the tray from the oven.

    • Brush the sausages with the onion chutney.

  5. Final Roasting:

    • Place the tray back in the oven for an extra 5 minutes or until the sausages are nicely caramelized.
