STICKY SAUSAGE TRAYBAKE

Ingredients-
5 potatoes
2 medium sweet potatoes
1 tbsp olive oil
1/2 tsp salt
1/2 tsp pepper
1 red onion
3 peppers
2 tomatoes
8 sausages
5 sprigs of thyme or rosemary
3 tbsp onion chutney
Instructions-
Prepare the Potatoes:
Cube the potatoes into 2cm pieces.
Drizzle with olive oil and sprinkle with salt and pepper.
Roast in the oven at 180°C for 40 minutes.
Assemble the Traybake:
After the potatoes have roasted for 40 minutes, remove them from the oven.
Add the red onion, peppers, tomatoes, and sausages to the tray with the potatoes.
Toss everything together to combine.
Bake Again:
Return the tray to the oven.
Bake at 180°C for an additional 20 minutes.
Add the Chutney:
Remove the tray from the oven.
Brush the sausages with the onion chutney.
Final Roasting:
Place the tray back in the oven for an extra 5 minutes or until the sausages are nicely caramelized.
