SUMMER FRUIT GALETTE

Ingredients-

  • 170g plain flour

  • Pinch of salt

  • 2 tbsp caster sugar

  • 120g cold cubed butter

  • 65g yoghurt

  • 2 tbsp cold water

Fruit Dressing:

  • Juice of 1 lemon

  • 2 tbsp cornflour

  • 2 tbsp caster sugar

  • Fruit of your choice


Instructions-

Dough:

  • In a bowl, combine flour, salt, and caster sugar.

  • Add cold cubed butter and rub together to create a fine crumble (refer to the reel for consistency).

  • Once crumbly, add yoghurt and mix, then gradually add cold water until a dough forms.

Assembly:

  1. Roll the dough to about 1/2 cm thickness.

  2. Place on a lined baking tray, draw a light circle with a butter knife, and fill the circle with your choice of fruit.

  3. Roughly fold over the edges, pinching in areas to secure the pastry.

  4. Mix lemon juice, cornflour, and sugar, then pour over the fruit evenly.

  5. Sprinkle tart edges and fruit filling with additional sugar (adjust for tartness) and cinnamon if it complements the fruit.

Baking:

  • Bake at 180°C for 25-30 minutes until golden. Check at 20 minutes, especially if your oven runs hot.
