TANDOORI LAMB SKEWERS
Tandoori Lamb Skewers are full of taste and easy-to-make, great for lunch or a main course. Marinated in a yogurt and spice mixture, these skewers are grilled and served with delicious sides.

SERVES makes 4 skewers
Ingredients-
600g Lamb Leg Steaks, cubed
4 tbsp Greek yogurt
Large piece of ginger, grated
2 garlic cloves, grated
1 tbsp paprika
¾ tsp garam masala
1 tsp ground cumin
1 tsp ground coriander
½ tsp chili flakes
½ tsp turmeric
1 tsp brown sugar
Good pinch of salt and pepper
1 red onion, roughly chopped
1 pepper, roughly chopped
4 large skewers
Instructions-
In a bowl, combine the cubed lamb with Greek yogurt, grated ginger, grated garlic, paprika, garam masala, ground cumin, ground coriander, chili flakes, turmeric, brown sugar, salt, and pepper. Mix well to marinate the lamb. Let it sit for at least 15 minutes to allow the flavours to blend.
Preheat your grill to medium-high heat.
While the lamb is marinating, roughly chop the red onion and pepper.
Thread the marinated lamb, red onion, and pepper alternately onto the 4 large skewers.
Grill the skewers for about 3-4 minutes on each side or until the lamb is cooked to your desired level and has a nice char.
While the skewers are grilling, you can prepare the sides:
Pickled Red Onion:
In a small bowl, combine 1/3 red onion (finely sliced), cider vinegar, water, a pinch of salt, and 1 tsp sugar. Mix well and let it sit for a minimum of 30 minutes.
Coriander Yoghurt Dip:
In another bowl, combine 3 tbsp Greek yogurt, a small handful of coriander, a pinch of salt, and 1 tsp sugar. Blend until smooth using a hand blender.
Serve the Tandoori Lamb Skewers hot with pickled red onion, coriander yoghurt dip, and some lemon juice for an extra zing.
