THAI SEA BASS CURRY

The perfect well balanced, delicious 15 minute mid week meal.

Ingredients:

For the Rice:

  • 1/2 mug basmati rice

  • 1 tsp oil

  • 1 mug water

  • Pinch of salt

For the Curry:

  • 2 sea bass fillets

  • 1/2 tin coconut milk

  • 2 tbsp Thai curry paste

  • 1 mug quantity of leftover vegetables (onions, garlic, peppers, carrots, peas, broccoli)

  • 2 limes

  • Fresh coriander

  • Optional: additional aromatics such as star anise and cinnamon

For Garnish:

  • Chopped peanuts

  • Fresh chili

  • Additional lime wedges

  • More fresh coriander


Method:

  1. Prepare the Rice: Heat the oil in a saucepan over medium heat. Add the basmati rice and fry for 2-3 minutes. Season with salt, then add the water (using a ratio of 1 part rice to 2 parts water). Bring to a boil, then reduce the heat to low, cover with a lid, and simmer for 10 minutes. Remove from heat and let it sit, covered, for an additional 5 minutes.

  2. Prepare the Curry: In a separate pan, fry off all the leftover vegetables in a small amount of oil until softened. Add the Thai curry paste and stir to combine. Pour in the coconut milk and simmer until slightly thickened. Optionally, add additional aromatics such as star anise and cinnamon for extra flavor. Set aside.

  3. Cook the Sea Bass: Pat dry the sea bass fillets and make thin cuts in the skin side about 1 cm apart. Heat oil in a pan over medium-high heat. Place the sea bass fillets in the pan, skin side down, laying them away from you to prevent splashing. Fry for 3 minutes until the flesh starts to turn white from translucent. Once most of the flesh is white, remove from heat and flip the sea bass, allowing the residual heat from the pan to finish cooking the fish.

  4. Assemble and Serve: To the cooked rice, add the juice of 1 lime and a handful of finely chopped fresh coriander, and mix well. Serve the rice alongside the prepared curry. Place the cooked sea bass fillets on top of the curry, crispy skin side up. Finish with chopped peanuts, fresh chili, additional lime wedges, and more fresh coriander.
