TOMATO, CHILLI & PORK RAGU

Tomato, Chilli & Pork Ragu is a spicy and colourful pasta dish that combines sausage, roasted vegetables, and a delicious tomato-chipotle sauce. The roasted onions, garlic, peppers, and chillies add a smoky depth to the dish. The option to add cubed chorizo adds an extra layer of spice. Served over penne pasta, this ragu is a perfect balance of heat and taste.

Ingredients-

  • 2 onions

  • 6 garlic cloves

  • 4 peppers

  • 4 chillies

  • Cubed chorizo (optional)

  • 2 cans of tomatoes

  • 2 tbsp chipotle paste

  • 2 tbsp tomato purée

  • 400 ml stock

  • Salt

  • Pepper

  • 8 sausages

  • 240g dried penne


Instructions-

  1. Roast Vegetables:

    • Roughly chop the onions, garlic, peppers, and chillies.

    • Roast them in the oven for 30 minutes at 180°C with a little oil.

  2. Prepare Sauce:

    • In a large pan, combine the canned tomatoes, chipotle paste, tomato purée, stock, and season with salt and pepper.

    • Simmer this mixture on low heat, adding the roasted vegetables once they are done.

  3. Prepare Sausages:

    • In a frying pan, remove the skins from the sausages.

    • Fry the sausage meat until browned.

  4. Cook Pasta:

    • Boil the penne pasta in a separate pan.

  5. Combine Ingredients:

    • Once all components are cooked, bring everything together in the large pan with the tomato sauce.

    • Add the browned sausage meat.

    • Stir well to combine all the ingredients.

  6. Serve:

    • Serve the ragu sauce over the cooked penne pasta.

    • Optionally, garnish with grated Parmesan cheese.
