TRUFFLE MAC ‘N CHEESE

Creamy, cheesy, and enriched with truffle, this dish is a welcome upgrade to the classic “Macaroni and cheese.” The preparation is a breeze, and it bakes to perfectly, creating a crispy crouton crust that complements the cheese sauce. A blend of cheddar, truffle cheese, and a touch of Dijon mustard makes the sauce irresistibly tasty.

Ingredients-

  • 200g elbow macaroni

  • 100g croutons (you can use any type of bread)

  • 1 small garlic clove, minced

  • 2 tbsp olive oil

  • 2 tbsp butter

  • 2 tbsp plain flour

  • 500ml whole milk

  • 1 tbsp dijon mustard

  • 180g truffle cheese (look for a quality truffle cheese)

  • 100g medium cheddar cheese, grated

  • 1 tsp black pepper

  • 1/2 tsp salt


Instructions-

  1. Start by cooking the elbow macaroni according to the package instructions in a large pot of salted boiling water. Drain and set aside when cooked.

  2. In a food processor, blend the croutons into coarse crumbs. You can also do this by hand if you don't have a food processor.

  3. In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for about a minute until fragrant.

  4. Add the butter and let it melt. Once melted, stir in the plain flour and cook for about 2 minutes, or until the mixture is smooth and just beginning to turn golden.

  5. Gradually whisk in the whole milk. Continue to whisk until the mixture thickens and comes to a gentle boil. This should take about 5-7 minutes.

  6. Remove the saucepan from the heat and stir in the Dijon mustard.

  7. Grate the truffle cheese and cheddar cheese and add them to the sauce.

  8. Stir until the cheese is melted and the sauce is smooth. Season with salt and black pepper.

  9. Combine the cooked macaroni and the cheese sauce in a large mixing bowl. Make sure the macaroni is well coated with the cheese sauce.

  10. Preheat your oven's grill..

  11. Transfer the mac 'n cheese to an ovenproof dish. Sprinkle the crouton crumbs evenly over the top.

  12. Place the dish under the grill for a few minutes, just until the crouton crumbs are golden and crispy.

  13. Remove from the oven, let it cool slightly, and serve your delicious Truffle Mac 'n Cheese.
