TUSCAN CHICKEN

A combination of tender chicken breasts coated in a golden, herb-infused crust, served in a creamy Tuscan sauce. With ingredients like sun-dried tomatoes, Manchego cheese, and fresh spinach, this dish is packed with rich flavours. Perfectly golden and creamy, it's a restaurant-quality meal you can easily make at home to impress your family or guests. Serve with mashed potatoes or linguine.

Ingredients-

For the chicken:

  • 4 chicken breasts

  • 1 egg

For the seasoned flour:

  • 4 tablespoons flour

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 1/2 teaspoon paprika

  • 1/2 teaspoon oregano

For the sauce:

  • 1 tablespoon oil

  • 1 onion, finely diced

  • 1 red pepper, sliced

  • 2 garlic cloves

  • 90-120g sun-dried tomatoes, sliced

  • 1 teaspoon paprika

  • 300ml chicken stock

  • 150ml double cream

  • 75g Manchego cheese

  • A large handful of fresh spinach


Instructions-

  1. Coat the 4 chicken breasts in a beaten egg and set them aside.

  2. On a plate, combine the seasoned flour by mixing 4 tablespoons of flour, 1/2 teaspoon salt, 1/2 teaspoon pepper, 1/2 teaspoon paprika, and 1/2 teaspoon oregano. Coat each chicken breast in this seasoned flour mixture.

  3. In a pan, heat 1 tablespoon of oil and 1 teaspoon of butter. Pan-fry the coated chicken breasts until they have a golden crust. Remove the chicken and place it on a plate.

  4. In the same pan, prepare the sauce. Add 1 tablespoon of oil, diced onion, sliced red pepper, and minced garlic. Sauté these ingredients on medium heat for about 15 minutes until they become tender.

  5. To the sautéed mixture, add the sliced sun-dried tomatoes and 1 teaspoon of paprika. Continue to cook for a few more minutes.

  6. Pour in 300ml of chicken stock and 150ml of double cream. Let the sauce simmer for 5 minutes until it thickens.

  7. Turn off the heat and add 75g of Manchego cheese. Stir until the cheese is fully melted, and then add a large handful of fresh spinach, allowing it to wilt in the warm sauce.

  8. Transfer the sauce and chicken breasts to an oven-safe dish.

  9. Bake in a preheated oven at 175°C for 25 minutes.
