OVEN BAKED CHICKEN GYROS

You are going to want to DOUBLE or even triple this recipe, why? LEFTOVERS. They will no go to waste- trust me. Plus, this can be frozen in portions too!

Ingredients & Method

- 600g Chicken Thighs, boneless and skinless
- 2 peppers
- 1 red onion
- 1 garlic clove
- 2 tbsp natural yoghurt
- 1 tbsp olive oil
- 1/2 lemon juice
- 1 tbsp ground coriander, cumin, paprika
- 1/2 tbsp oregano, thyme
- 1 tsp salt & 1/2 tsp black pepper

Add all of the above to a large bowl, cut the peppers & onion into large chunks to help layer up the chicken.
Marinate this for at least 30 minutes- upto the day before.

Add the other half of the lemon to the oven dish and layer the chicken, choosing the flattest chicken breast, peppers, red onion the repeat with the rest of the chicken. You can use skewers but liking it high like this is fine.

Roast in the oven for 35 minutes at 210°c.

If you’re doubling this recipe, ensure your chicken is fully cooked and test with a thermometer 75°c in the thickest part.

For Tzatziki (Serves 2):
- 250ml natural yogurt
- 1/4 cucumber, cubed
- 10 finely diced mint leaves
- Juice of 1/2 lemon
- 1/2 tsp sugar
- 1/4 tsp salt
- 1/2 garlic clove

In a bowl, combine 250ml natural yogurt, 1/4 cubed cucumber, 10 finely diced mint leaves, juice of 1/2 lemon, 1/2 tsp sugar, 1/4 tsp salt, and 1/2 garlic clove.
Mix well and refrigerate until ready to serve.
