TZATZIKI POTATO SALAD

All the beautiful flavours of tzatziki combined with buttery, soft new potatoes. This side dish is ideal alongside my Chicken Souvlaki.

Ingredients-

  • 250g new potatoes

  • 5 tbsp mayonnaise

  • 1 tbsp olive oil

  • 4 tbsp natural yogurt

  • 1/2 small clove garlic, finely grated

  • 4 tbsp spring onions or red onion, finely sliced

  • 3 tbsp fresh mint, finely chopped

  • 1/4 cucumber, finely diced

  • Juice of 1/2 lemon (or lime)

  • 1/2 tsp salt


Instructions-

Prepare the Potatoes:

Wash the new potatoes thoroughly and cut them into equal sizes to ensure even cooking.
Boil the potatoes in salted water until they are fork-tender, about 15-20 minutes. Drain and set aside to cool slightly.

Prepare the Tzatziki Mixture:

Finely dice the cucumber, spring onions (or red onion), and herbs.
In a large mixing bowl, combine the mayonnaise, olive oil, natural yogurt, grated garlic, diced cucumber, sliced onions, chopped mint, lemon juice, and salt.

Combine:


Once the potatoes have cooled slightly, add them to the bowl with the tzatziki mixture.
Mix well to ensure the potatoes are evenly coated with the dressing.

Serve:

Transfer the potatoes to a serving dish.
Garnish with additional chopped mint and fresh lemon wedges.
Serve immediately and enjoy!

Tips:

For a lighter version, you can reduce the amount of mayonnaise and increase the yoghurt.
Feel free to adjust the garlic and lemon juice to taste.
This dish can be served warm or chilled, depending on your preference.
